It's green, long & sometimes fat...

I'm talkin' about zucchini my friends! This last weekend we went up to my parents and my dad gave me a few of his nice, juicy zucchini's he grew in his garden. Is there anything better than fresh produce? I feel like the colors are brighter and the taste is just better (but maybe it's just in my mind, but I think not?!) I promise this isn't becoming a food blog, but with me being pregnant and with it being grilling season--how can I not think about food?! ha. And really, what is more vibrant and colorful than fresh veggies?! 

Now, what to do with a dozen zucchini's? Well, yesterday we had grilled zucchini with melted butter and cheese on top--and I baked a loaf of zucchini bread. So that used up about half of them. For the other half, I have a few yummy ideas up my sleeve (and hey it's a great way to add GREEN into your diet!)
***or you can always just do as my little S did...hug, hold, and kiss it?!***

  3. I remember the summer before entering college, we had a few Zucchini plants and they went wild. I'm pretty sure we had Zucchini for almost every meal of the day, we had pancakes with them in it, pasta with them, bread, you name it we had it. The first dinner in the dinning hall had zucchini. The Zucchini kept following me!

  4. I experimented with breaded baked zucchini over the weekend. Turned out yummy but I have some tweaks to make. I love how it sweats when you cut into it. Fun!

  5. I just made the most delicious cake yesterday! - zucchini chocolate spice cake with chocolate ganache. and it was vegan. yum!

  7. love it!! My dad grows a bunch of vegetables from tomatoes to bell peppers to armenian cucumbers. All delicious! (and I think you're right. Home-grown produce DOES taste better! ;))
