So, to cure you from those Monday blues...I thought I'd share the recipe with you--to make the first day of the work week not such a doozy! Trust me, this cake is amazing!!!!!!
Apricot Cake Recipe:
1 cup sugar
2 cup flour
1 cup oil
2 eggs
1/2 tsp. cloves
1 tsp. cinnamon
1 tsp. salt
2 tsp. baking soda mixed in 1/4 cup hot water
1 tsp. vanilla
1 can of apricots (juice and all)
***Cook at 350 for about 30 minutes. Meanwhile, while it's baking you can whip up the best part of this cake...the frosting!
Frosting:
1 cup brown sugar
1/2 cup margarine (I use butter)
1/4 cup milk
2 cups powdered sugar
1 TBS vanilla
***Boil brown sugar and butter for two minutes. Add milk and boil again. Cool COMPLETELY...than add powdered sugar and vanilla! Frost cake when its warm but not hot!

Have you ever done it with fresh apricots? We have a tree and I'm wondering if it works with fresh.
ReplyDeleteno, I haven't but I don't see why it wouldn't work. However, in the recipe it says to pour the whole can and the juice into the recipe so I am not sure if fresh fruit would work only b/c I am not sure it gives it enough liquid (which i think makes a difference with how moist the cake is...)
