Refreshing+Mint+Green=

You want to make a DELICIOUSLY refreshing drink to go with your  St.Pattrick's Day weekend?! Oh my, have I got a recipe for you...MINT LIMEADE! My wonderful friend Mary (author of My Green Diet) shares this recipe in her book and sent it my way--and let me tell you it did NOT disappoint! Plus it's super easy!

mint limeade

  • 1 cup sugar
  • 1 cup water
  • sprig of mint
  • 1 cup fresh lime juice or a bit more if your like me and you want it extra tart
  • 2 cups ice
  • 2 cups water
  • lime slices and mint leaves for garnish
Make a mint infused simple syrup by combining 1 cup water, 1 cup sugar, and a sprig of mint in a pan over low heat. Stir occasionally until the sugar has dissolved. Remove from heat and set aside.

Juice fresh limes for 1 cup lime juice. Just when you think you can't get anymore juice out of that lime (I know...not the most flattering picture?!) squeeze it between your teeth--I'm telling you this technique works like a charm!
Then, In a large pitcher, combine 1 cup lime juice,the ice and the water...
Lasty, add the sweet syrup and a few more mint leave because it makes it look pretty (oh and it makes it taste delicious!)
This drink was a huge hit with my family, especially my little one who kept wanting "MO'" (aka more)
Then she wanted the lime...so I let her have a taste--not sure she liked that as much?! ;-)

***oh and the other great thing about this...is you can take your lime peels and the rest of your leftover mint and put it down your disposal. Turn it on and smell the freshness coming from your sink! It smells so deliciously clean!

    Also when juicing any citrus fruit instead of having to put it in your mouth you can put the prongs of a fork into the open side and wiggle them about whilst squeezing the fruit with the other hand. Works a treat...
